Cheesy Spiralized Zucchini on Griddle Top
1/2 cup Small Tomatoes
Salt & Pepper
Bacon 3 slices
(cook 1 Minute)
2 Tbs Butter
2 Sliced Scallions (Light parts only)
1 Tsp Minced Garlic
Stir in 2 Tsp Flour
Add to the (Butter, Scallions & Garlic)
2/3 Cups Milk
1/2 tsp Dijon Mustard
1/2 Tsp Salt
Pinch of Cayenne
Whisk until thickened
Take off heat and whisk 1/3 cup cheddar cheese and set aside.
Sauté 1 lb of spiralized zucchini in olive oil or butter for 2 minutes.
Add zucchini to the cheese sauce and top with tomatoes and bacon.
