Char Siu Chinese BBQ Recipe Griddle Top
Char Siu is a popular way to flavor and prepare barbecued meat in Cantonese cuisine and it’s perfectly done on the Griddle Master griddle top. Everyone will love this tender, moist and very flavorful dish. Char Siu can be served over white rice, with a side of veggies or on a steamed bun.

For Six Portions

Ingredients

  • 3 pounds short ribs
  • 2/3 cup soy sauce
  • 1/3 cup hoisin sauce
  • 1/2 cup honey
  • 1/3 cup brown sugar
  • 1/2 cup Chinese rice wine (can sub sake, or dry sherry)
  • 1/3 cup ketchup
  • 4 garlic cloves, crushed
  • 1 teaspoon five-spice powder
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon cayenne
  • 1/8 teaspoon pink curing salt, optional
  • 1 or 2 teaspoons red food coloring, optional
  • Kosher salt to season meat before grilling

Directions:

Combine all ingredients in a sauce pan and bring to a boil for 1 minute. Let cool down. Use as a marinade. Marinade for 3+ hrs. Overnight is best.
Cook at 275° for 40 minutes flip and cook an additional 40 minutes.
Best served with white rice.
